Quinoa Seeds (Chenopodium quinoa)
Quinoa (“keen-wa”) 5-6 feet tall with vibrant colours, red through orange, yellow, purple and mauve. In midsummer, a large seedhead develops, loaded with millet-like seeds which can be harvested after the leaves have dried.
Quinoa germinates in fairly cool conditions and prefers light, well-drained soil. Plant in rows and thin to at least a foot apart for maximum growth. Leaves are good fresh or cooked through spring and summer.
Quinoa is 15-16% protein and is high in E and B vitamins, calcium, iron and phosphorous. It is easy to digest and has a delicious flavour. It must be thoroughly rinsed before cooking and is then prepared like rice.
